Pinto Bean Fudge

I wanted to try this recipe sometime, but I needed some place to store it. I'm not sure where to find pinto bean flour, but Lindy thinks you can grind it up from dry pinto beans. Should be interesting at any any rate.


Pinto Bean Fudge

Combine and set aside: 2 lbs. Milk chocolate chips (5 ½ cups) and 1 cube of butter.

            4 cups sugar

            ½ can pinto bean flour 

            1 can evaporated milk

            ½ cup water

Mix sugar and bean flour well. Combine with milk and water. Boil for 7 minutes stirring constantly.

Pour hot sugar and milk mixture over chips and butter, stir until melted. Add 1 tsp vanilla. Pour into buttered 13 x 17 pan and put into refrigerator to set up.

That's exactly what you do, just run the beans through your wheat grinder. You can do the same thing with popcorn kernels and most lentils.

This is a REALLY good fudge, I had it years ago at a preparedness fair. YUM!

I made this fudge once for a family party. Nobody even knew it was made of pinto beans. Decent stuff!
